How to make keto puffed pastry (and more!)
What is keto?
A ketogenic diet is a diet in which a person eats only plant-based foods, including plants, fruit and vegetables.
The term refers to a way of eating that promotes healthy eating habits by limiting the amount of carbohydrates, protein and fats found in a food.

The keto diet is considered one of the most effective weight loss strategies available for people who want to lose weight or lose fat.
It has also been used to treat a variety of conditions, including obesity and diabetes, and has been recommended by health care professionals worldwide.
How do you make ketos puff pastry?
Start by making your own puff pastry.
In a bowl, combine the coconut oil, almond milk, honey, maple syrup, and vanilla.
In an electric mixer or food processor, beat the coconut milk and almond milk together until fluffy.
Add the vanilla and continue beating until well combined.
Add 1/4 cup of the flour to the bowl and mix well.
Add in the coconut flour mixture and the remaining 1/2 cup of flour.
In another bowl, mix the almond milk mixture with the coconut flours until well incorporated.
Add a pinch of salt to the dough and knead until it forms a ball.
Roll the dough out into a long rectangle.
Place the puff pastry on a lightly greased cookie sheet or silicone baking mat.
Using a toothpick, cut the pastry into 4 1/8-inch circles.
Place each pastry circle on the baking sheet and bake for 30 minutes.
Cool for 15 minutes on the sheet before removing from the sheet.
To serve, place the remaining coconut cream in a serving dish.
Top each puff pastry with a dollop of the remaining almond milk and top with another dollop.
