That’s why, if you want to keep your eyes on the prize at the end of the line, these easy apple butter cakes can help you keep your mind off those long, monotonous office hours by providing a quick snack at the perfect time.

It’s like a dessert in the best possible way, so here’s what you need and how to make it.

Ingredients 1 tablespoon butter 2 eggs 2 1/4 cups sugar 2 teaspoons vanilla extract 2 tablespoons flour 1 cup flour 2 cups granulated sugar 1/2 cup unsalted butter, melted 1/3 cup granulated flour 1/8 teaspoon salt 1 cup sliced apples, chopped Instructions Preheat oven to 350 degrees F. Line a 9-inch round cake tin with parchment paper or aluminum foil.

In a small bowl, whisk together butter, eggs, sugar, vanilla, flour, and salt until well combined.

Add flour mixture and mix well.

Scrape bowl into a large bowl, add remaining ingredients, and mix thoroughly.

Roll out to 3/4-inch thick cake tin.

Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean.

Let cool on a wire rack for about 10 minutes before slicing into squares.
